Join The Interval Bottle Keep and on your next visit, your own bottle of spirits awaits, nestled among 400 others that decorate our ceiling and belong to fellow Long Now members and friends. While researching long-lived institutions in Japan, we learned about traditional bottle keeps. Patrons purchase an entire bottle of spirit kept at the bar for their personal enjoyment on future visits. To make ours special, we asked St. George Spirits to develop two exclusive spirits just for us: a single malt whiskey and a gin made with juniper berries foraged on our Nevada Bristlecone Preserve.
